Around October to November every year
~Harvest~ We carefully hand-pick coffee cherries one by one in the coffee forests and farms. We handle only coffee cherries picked in the forest .
~Weighing~ Farmers bring their harvested coffee cherries to the washing station. Here farmers are paid for their coffee cherries. *Habtam does not have this step because he uses coffee from his own forest.
~sorting~ Collect only red berries. Instead of removing other fruits, it is a task to collect only red fruits.
~Pulverizer (Washed only)~ Place the coffee cherries under a stream of water to remove the rind and pulp. Always manned to prevent clogging.
~Flush (Washed only)~ After removing the mucilage, rinse with water. If you do not keep the fermenter and this route clean, bacteria will grow and you will be caught at the immigration inspection.
~Fermentation (Washed only)~ Put it in a fermenter and remove the mucilage with the power of enzymes. Fermentation time is approximately 72 hours.
~dry~ Dry in an African bed. (Image is Natural) Depending on the weather, if sunny days continue, it will dry in 7 to 10 days.
~threshing~ I'm going to threshing the shell of the coffee cherry. This is where the coffee becomes “raw beans”.
~sorting~ Foreign matter and defective beans mixed in the threshed green coffee beans are removed. This work, which is usually done twice, is done three times to improve quality and increase local employment opportunities.
~Transportation~ From Kafa to the capital Addis Ababa. Only Galitebe coffee beans are loaded onto trucks to avoid confusion with other green coffee beans.
~Packing/Export~ In Ethiopia, it is normal to reuse jute bags, but new hemp bags are used to maintain strength and cleanliness. Green beans are packed in a plastic bag inside a hemp bag to improve moisture resistance. After obtaining an export permit from the Ethiopian government,it will come to Japan by sea from the port of Djibouti.
~Import/Sales~ Receive an import permit from the Japanese government. It is subdivided at the Galitebe warehouse located in Osaka Prefecture and shipped to all over Japan.
